This simple chocolate cake contains only 4 ingredients. The cake is made with almond flour and contains no grains, gluten or dairy. This recipe contains refined sugar but you could try experimenting using some sugar alternatives such as raw cane sugar, coconut sugar or xylitol.
Preheat the oven to 170 degrees. Melt the chocolate. Leave to cool slightly.
Whisk the egg whites until they form peaks. Whisk the egg yolks with the sugar until they become pale. Fold the whisked egg whites into the whisked egg yolks.
Carefully fold in the cooled but still melted chocolate. Slowly and carefully stir in the ground almonds and spoon into a prepared 20cm round cake tin.
Bake in the centre of a preheated oven for 30 minutes. Then turn the oven off and leave the cake in for an additional 15 minutes. Remove the cake and let it cool on a wire rack. Dust with icing sugar to taste.
